Kolbroek

This name refers to a type of pig in South Africa. At the time I worked on a farm where there were a few Vietnamese Potbelly pigs and on a rear occasion these weird-looking ones would pop up which are called the Kolbroek.  Kolbroek in Afrikaans refers to “spot on the pants” and the reason behind the drawing on the label.

Whole bunch fermented for a period of 7 – 11 days under semi-carbonic and oxidative conditions.

Aged in 500L old barrels for up to 10 months.
